Grandma's (Vegan) Biscuits
Growing up, I spent most of my summers in the south with my grandparents. My grandmother would wake up at the crack of dawn every morning. With the radio playing The Canton Spirituals in the background, and the smell of bacon or some food slipping into the rooms where my sister and I slept. She never really had to wake us up with her voice, the smell of her food did all the work.
One of my favorite things that my grandmother would make were her homemade buttermilk biscuits. Like, let me tell you how good these things were first thing in the morning!!! My grandfather would eat his with a little butter and some molasses and my sister and I would eat ours with just some good ol fruit preserves, which my grandmother would make as well.
I wanted to recreate these beauties but this time, make them vegan. So of course after seeing how well coconut milk (or any non dairy milk) works in place of regular milk, I knew that I could make something happen.
This recipe has few simple ingredients. Which is what I love most about "vegan-izing" some of my favorite dishes. These biscuits are, light, fluffy, and everything you would ever imagine in a buttermilk biscuit.
- 1 c unsweetened non dairy milk I like almond milk
- 1 tbsp apple cider vinegar
- 2 c organic all-purpose flour
- 1 tbsp baking powder
- 1/2 tsp baking soda
- 3/4 tsp sea salt
- 4 tbsp non dairy butter
Preheat oven to 450 degrees (you want to make sure you have a really hot oven!)
Mix milk and vinegar together and set aside (this is your "vegan buttermilk"
Mix all dry ingredients in a large bowl
Add the cold butter and use a fork or your fingers to combine everything until only small pieces remain and it resembles little crumbs. Work fast so the butter doesn’t melt.
Slowly pour in buttermilk mixture into the middle of the dry ingredients and stir with a wooden spoon until just slightly combined (try pouring the mixture 1/4 c at a time because you may not need it all) mixture will be a little sticky.
Put dough onto a floured work surface and gently knead 2-3 times
Roll out dough to 1" thickness and cut circles with cup, glass, jar, or biscuit cutter.
Place biscuits on parchment lined cookie sheet so they touch each other. (This will help them all rise evenly!)
You can brush a little bit of melted butter on top of these so that they will brown up nicely.
Bake for 15 minutes or until golden brown.
